Seared Steak with Smoked Paprika Rub

Ingredients

4 New York strip steaks, each 8 to 10 ounces and about 1 inch thick, trimmed of excess fat

Olive Oil

RUB:

1 teaspoon smoked paprika

1 teaspoon packed light brown sugar

1 teaspoon kosher salt

1 teaspoon granulated onion

1 teaspoon chipotle chile powder

Directions

Preheat the grill with the control knob in the high position for 15 to 20 minutes.

Lightly brush the steaks on both sides with oil and then season thoroughly with the rub.

Brush the cooking grates clean. Grill the steaks over direct high heat, with the lid closed, until cooked to your desired doneness, 6 to 8 minutes for medium rare, turning once. Remove the steaks from the grill and let rest for 5 minutes. Serve warm.
